These two full lamb racks are expertly Frenched, with the bones carefully trimmed for an elegant presentation. As they roast, the exterior caramelizes to a golden crisp, while the meat inside stays tender, juicy and flavorful.
Why is this Spanish lamb so much better? It starts with the lambs, which are much smaller than the American versions. The meat has a tender bite and a subtly sweet flavor that’s free of any gamey notes.
Raised in the ancient dehesa rangelands of southern Spain, these lambs (called corderos in Spanish) graze in the same storied landscape that produces the world-renowned Ibérico pig.
