Cazuelas are a favorite in our kitchen, just the right size for holding diced herbs or other ingredients for recipes. They are also excellent for serving chilled olives or roasted nuts when you are ready for a snack.
These cazuelas are made in Catalunya, where each one is formed and small handles are added by hand – called “orejas” in Spain. The clear and bright white glazes are food safe and lead free, excellent for serving your favorite tapas.
These cazuelas come from the town of Breda in Catalunya, where they have been making terra cotta cookware since Roman times. The local clay produces a terra cotta that holds heat, great for keeping meals warm even after the dish is brought to the dining table.
As each piece is hand painted, the exact color may vary.
FAQ
FAQ
How do I prepare my cazuela for cooking?
1. Soak the entire piece in water for at least 2 hours or overnight.
2. Drain and wipe dry.
3. Fill your cazuela with water.
4. Place over low heat on the stove and very slowly bring the water to a boil. (Use a heat diffuser for gas stoves.)
5. Let the water boil down until only a little remains. Do not allow all the water to evaporate as this may cause your cazuela to crack.
6. Cool slowly, then wash by hand.
Can I cook strongly flavored seafood in a cazuela?
Yes, but consider using an alternate curing method first. After soaking, rub olive oil inside the base and place the cazuela in a preheated 300°F oven for about 1 1/2 hours. Turn off the heat and let it cool gradually. This can help reduce flavor absorption and maintain the integrity of the vessel.
Is the cazuela ready for use after preparation?
Yes, once cured, the cazuela can be used in the oven or on the stovetop. Always heat and cool gradually to prevent cracking.
What precautions should I take during use?
Avoid sudden temperature changes, as these may cause the cazuela to break. If using a gas stove, always cook with a heat diffuser. Discoloration may occur with use. Always wash by hand.
What if my cazuela hasn’t been used in a long time?
If your cazuela hasn’t been used for cooking in a while, it should be cured again before use to protect against damage.
