Ventresca is the incredibly tender belly of the Bonito del Norte tuna. Buttery and mild, it is the finest tuna we have ever tried. Conservas de Cambados Ventresca belly fillets are packed by hand in olive oil to preserve it at its best. Serve this delicious tuna belly on toast or sprinkle fillets on salad.
Bonito del Norte is a very special type of Albacore tuna. The fishermen of Galicia catch each tuna by hand with a fishing pole and hook. Once ashore in the famed fishing port of Burela, the Bonito del Norte is rushed to the small nearby cannery of Conservas de Cambados. There it is poached in sea water and packed by hand in olive oil. The result is a delicate, silky tuna unlike any other.
The quality of the Bonito del Norte ventresca comes from the dolphin-safe line-catching technique which avoids the stress caused by harvesting with nets. Dozens of fishermen reach out from the sides of their boat with long poles and hook each tuna one-by-one so they are pulled in quickly without damaging the tuna or endangering other sea life.
Burela is an ancient fishing port on the Galician coast near the cool waters of the Atlantic. It is famed for the quality of its Bonito del Norte harvest. The Conservas de Cambados cannery is located close to one of Spain’s largest Rías (estuaries), known as the 'Ría de Arousa'. Their facilities are very close to where the seafood is harvested, so they have access to the freshest Bonito del Norte in Spain.
