La Mancha Saffron by Peregrino

Often referred to as “the gold of spices,” saffron is intertwined with Spanish cuisine and is an indispensable ingredient in paella and other rices and stews. Its bright floral taste and golden coloring power enhances everything from rice and meat to stews, soups and sauces.

We worked with our artisan supplier to offer a saffron that has the quality of an everyday luxury. Grown and produced in La Mancha, this saffron is the essential spice for a quality paella.

Although saffron traces its origins to Asia Minor and is now widely produced in countries like China and Iran, most foodies agree that the finest saffron is Spanish. Formed from the dried yellow stigmas of the purple crocus, harvesting is a lengthy and painstaking process. The flowers are hand picked, and then the thread-like stigmas are immediately and intricately plucked for drying. Each crocus contains only three stigmas and it takes over 200,000 stigmas to make one pound of saffron.
