Pago de Espejo is a true labor of love, led by four generations of women from the Espejo family. Their legacy began almost a century ago with their great-grandmother Damiana and continues today under the leadership of sisters Rosario and Mercedes Minchón, who oversee every step of production.

The oil is made on a single estate in Jaén, Spain, with a special microclimate where olive trees thrive. In early November the olives are cold pressed within hours of picking to preserve freshness, flavor and aroma. Naturally high in oleic acid and polyphenols, this early harvest oil is deliciously complex and flavorful.
