Because the potatoes of the region are so flavorful, only a little salt is added to accent the chips.

When we lived in Spain, we would visit potato chip stands at fairs, where potatoes were freshly sliced and added into a roiling cauldron of olive oil in front of our eyes. The chips were cooked until golden, then sprinkled with salt and served in a paper cone.
