Description
Description
This exceptional abanico pork skirt steak is richly marbled and perfect for the grill. So tender and flavorful, it redefines what you expect from pork. We like to sear it in a cast iron skillet or over hot charcoal on the grill. The fat melts beautifully, creating a crisp, caramelized crust and a tender center.
These 100% Iberico pigs roam together across a single ranch in the Texas Hill Country, feasting on mesquite beans, acorns and prickly pear. Raised outdoors for over a year and a half, their special diet and all of that exercise adds a beautiful marbling to the pork.
Every Texas Iberico® pig lives its entire life outside, with over an acre of pasture for each animal. Certified Prop 12 compliant, the ranch upholds the highest standards of animal care and sustainable farming.
Descended from purebred Ibérico pigs imported from Spain, these Iberico pigs have flourished in the Texas Hill Country, producing some of the best pork in the world.
Your pork ships frozen on dry ice. Thaw before cooking. For best results, cook whole cuts of pork to an internal temperature of 145°F as recommended by the USDA.
