- 1 lb 80/20 ground pork by Texas Iberico®
- 4 slices young Manchego cheese
- 4 slider buns, toasted
- Arugula, dressed lightly with:
- Extra virgin olive oil
- Pedro Ximenez vinegar

These were some of the best hamburger sliders we’ve ever eaten! We source ground pork from our friends at Texas Iberico® who provide pasture-raised Ibérico breed pork directly from a ranch in the Texas Hill Country. The Manchego cheese adds an authentic Spanish taste.
Steps
Season meat with salt and pepper, form into four equally sized balls and set aside for 30 minutes.
Heat a cast iron pan over high heat and add a little oil.
Place each balls in the pan and smash until the patties are about ¼ inch thick. Cook, for 3-4 minutes on the first side. Flip the patties and top with slices of cheese. Continue to cook for 3-4 minutes or desired doneness.
Place a dried tomato or 2 on the bottom of each bun, top with the patties, dressed arugula and top bun. Pour a glass of wine and enjoy!

Delicious and easy! I liked mixing it up with ground pork in these, instead of the standard ground beef.
