Lomo Ibérico de Bellota is one of Spain's finest meats. This sliced cured pork loin is beautifully marbled, with a deep red color and a wonderful smoky aroma. It has a nutty, smoky taste and literally begins to melt in your mouth as you take the first bite. Serve at room temperature with your favorite wine.
Lomo Ibérico de Bellota is made with pork from pasture-raised Ibérico breed pigs that feast on sweet Spanish acorns, or 'bellotas.' These noble pigs get plenty of exercise roaming the dehesa forests, feasting on acorns, herbs and grasses.
Arturo Sánchez cures the pork loins with sea salt, garlic and Pimentón de La Vera (smoked paprika). This lomo was made using Spanish purebred Ibérico pork and was cured in the famed ham region of Gijuelo.
