Cured whole sausages may be stored at room temperature for several days unless otherwise indicated on the package but should be kept refrigerated for longer term storage. Always serve cured sausages at room temperature for the best flavor and texture. Check the packaging to see if the casing should be removed. Wrap leftovers tightly with plastic and store in the refrigerator for up to a week.
Small white amino acid crystals may occur which are completely safe to eat. Harmless white mold on the exterior of cured meats is not uncommon and can be wiped off using a cloth and some olive oil. Sausages with green or black mold, or an unpleasant smell, should not be consumed.
