Most Arbequina table olives are grown in Aragón and Cataluña, near the border of France in the locality of Garrigues. These olives have a sweet and firm texture, with a color ranging from pale green to medium brown -- which is a good way to describe their wonderfully elusive taste -- somewhere between that of a green and a brown olive.
Naturally cured with just salt, water and a touch of thyme, these tiny brown pasteurized olives have a sweet robust flavor. Arbequina olives go well with fresh fruits and garden salads or on their own as a tapa.
