First to receive these “Pata Negra” hams are several hundred subscribers who placed $200 deposits -- some as long as six years ago -- to assure that they would receive the very first Bellota hams to reach the shores of America. This is not an inexpensive treat – whole hams retail for about $1400 (or $96 per pound). and boneless hams for $162 per pound.
Jamón Ibérico de Bellota is the supreme achievement of Spanish cuisine. In the autumn, privileged members of an antique breed of free-range pigs, Cerdo Ibérico, are given access to forest meadows where Holm oaks and cork trees are laden with acorns. There these Ibérico pigs gorge themselves for months, gaining up to two pounds a day.
Because the animals freely range the dehesa forest meadows, the resulting Bellota hams have a unique flavor and composition due to their rich diet of acorns and the genetic makeup of the breed. Their meat is beautifully marbled with healthy fat that is 60% mono-unsaturated, like olive oil. It literally melts in your mouth.
Fermín USA is the first to import these coveted hams into the United States. The company is a partnership between Santiago Martin’s Jamones Fermín from the Spanish medieval mountain village of La Alberca; celebrated Spanish chef José Andres, owner of several restaurants including Jaleo in Washington DC; and Taylor Griffin, owner of Rogers International, an established gourmet importer from Portland, Maine.
Jamón Ibérico de Bellota is also available as a boneless ham at $162 per pound, and in convenient 4 oz packages of hand-sliced ham at $34.50.
