Zamorano tastes so good on its own that we enjoy it with crackers, olives and a good bottle of red wine from Ribera del Duero. Zamorano also pairs well with fresh fruit and membrillo preserves.
Vicente Pastor Zamorano cheese is made from the rich, flavorful milk of the native Castilian breed of sheep. This is what gives Zamorano a wonderful texture, smoother than other sheep's milk cheeses.
The nomadic shepherds of Castilla y León have been handcrafting Zamorano cheese in the region of Zamora for centuries. It is aged for seven months in a cold, humid environment and the cheeses are turned often and rubbed with olive oil. Our Zamorano has been awarded the Denominción de Origen Protegida designation, following a strict set of quality guidelines for authentic Zamorano.
