They ship their premium 100% Ibérico de Bellota paletas to the U.S., where each is beautifully carved by professional slicers flown in from Spain. The result is a nutty, rich cured meat marbled with beneficial fats that rivals Beluga caviar and Italian truffles as the most exceptionally flavorful food in the world.
Ibérico de Bellota can only come from Ibérico pigs that live a life of luxury, wandering the wild range-lands called the dehesa in western Spain. In the fall they feast on sweet, antioxidant rich acorns (called bellotas). The resulting hams and paletas (the front legs) are cured for up to 4 years, transforming into one of the most delectable cured meats in the world.
