This 'angulas de trigo' pasta is shaped to look like baby eels, a treasured dish from northern Spain. To achieve this appearance, a sheet of fresh pasta is covered with a sheet of pasta infused with squid ink. The pasta is dried at low temperature, then sliced into tiny little 'angulas.'
