Plump, meaty, crunchy and packed with the piquant sour and salty taste of capers, these olives are colossal in both size and flavor. Gordal means, “fat, big and fleshy” in Spanish, and these decadent delicacies live up to the name.
Toss whole in pasta or skewer them with boquerones, cheese and piquillo peppers for an impressive tapa. The added saltiness of the capers brings out the taste in a variety of milder dishes or complements an extra dirty martini.
These gourmet olives come from a long-established, family-owned company in the charming town of Carmona. Founded by Aceitunas Losada in 1961, the bustling olive operation is known for producing olives that have enjoyed special attention from the planting of the trees to their handcrafted journey from the fields to the jars. In fact, Losada creates these olives exclusively for La Tienda, hand stuffing them one by one with fresh capers instead of making them with machines or filling them with paste.
The stuffed olives stew in a vinegar, water and salt marinade. Serve chilled.
